Getting started

Before we can BBQ, we have to have the ingredients for the job. Therefore we have listed the items required to master all the enclosed recipes. There are a total of 30 ingredients in all. All the ingredients are common and do not require a major investment.

Sauces

Iron Works Sauces are going to put your taste buds into heaven, these heavenly sauces were created with a wide range of flavors. They range from sweet to spicy. We recommend that these sauces are applied in the final stages of cooking.

Maple BBQ Sauce

Used for: Beef, Chicken, or Pork
Marinade time: 2 hours
Ingredients:
1/2 cup of lemon juice
1/2 cup spicy tomato juice
1/2 cup bottled taco sauce
4 tablespoons cilantro, chopped
2 tablespoons red pepper flakes
1/2 cup olive oil

Stir until ingredients are completely mixed

Polynesian BBQ Sauce

Used for: Beef, Chicken, or Pork
Serves: 8
Ingredients:
1/4 cup soy sauce
2 cups crushed pineapple with juice
1/2 cup light brown sugar or honey
1 teaspoon ginger
1 cup ketchup
1/4 cup mustard
1/4 cup olive oil

Stir until ingredients are completely mixed

Tex-Mex BBQ Sauce

Spicy Used for: Beef or Chicken
Serves: 12
Ingredients:
1 cup ketchup
1 cup bottled taco sauce
1/2 cup salsa
3 tablespoons lime juice
1/2 cup tequila
1 tablespoon Tabasco sauce
1 tablespoon hot pepper flakes
2 tablespoons garlic cloves minced
1 tablespoon Iron Works Seasoning Salt

Stir until ingredients are completely mixed

Moonshine BBQ Sauce

Used for: Beef, Chicken, or Pork
Serves: 6
Ingredients:
2 cups of ketchup
1 cup mustard
1/4 cup light brown sugar or honey
2 tablespoons soy sauce
1/4 cup bourbon whiskey
1/4 cup olive oil
2 tablespoons ground pepper
1/4 cup Iron Works All Purpose Sauce

Stir until ingredients are completely mixed

Cajun BBQ Sauce

Spicy Used for: Beef, Chicken, Fish or Pork
Serves: 10
Ingredients:
1/2 cup of lemon juice
1/2 cup spicy tomato juice
1/2 cup bottled taco sauce
4 tablespoons cilantro, chopped
2 tablespoons red pepper flakes
1/2 cup olive oil

Applejack BBQ Sauce

Used for: Chicken or Pork
Serves: 10
Ingredients:
1/2 cup apple jelly
1 cup applesauce
1 cup chili sauce
1 cup ketchup
1/4 cup mustard
3 tablespoons lime juice
1/2 cup tequila
1 teaspoon red pepper flakes
2 tablespoons soy sauce

Stir until ingredients are completely mixed

MARINADES

Iron Works Marinades add all the flavor and seasoning to make all your beef, poultry and seafood taste like it was cooked in a 4 star restaurant. With such a wide variety, you will be able to please all your guests. We recommend that these marinades are applied in the first stage of cooking.

Sweet and Hot

Spicy Used for: Beef, Chicken, or Pork
Serves: 24
Marinade time: 4 hours
Ingredients:
3/4 cup lemon juice
3/4 cup soy sauce
1/4 cup olive oil
1/4 cup light brown sugar
9 garlic cloves minced
1/4 cup hot sauce (for milder mix 1/2 and 1/2 French dressing)

Sweet Tomato

Used for: Beef, or Pork
Serves: 24
Marinade time: 2 hours
Ingredients:
1/2 cup of Iron Works All Purpose Sauce
2 cups of tomato ketchup
2 cups of Dijon mustard
1 cup light brown sugar
2 tablespoons ground pepper
1/4 cup soy sauce
1 cup olive oil

Stir until ingredients are completely mixed

Italian Surprise

Used for: Beef, Pork or Chicken
Serves: 6
Marinade time: 2 hours
Ingredients:
1 1/2 cups Italian bottle salad dressing
1/2 cup white wine
4 garlic cloves, crushed

Stir until ingredients are completely mixed

Fish and Shrimp

Used for: Seafood
Serves: 4
Marinade time: 2 hours
Ingredients:
1 cup olive oil
1 teaspoon dried fennel seed
1 teaspoon red pepper flakes
4 cloves of crushed garlic
1/4 cup of lemon or lime juice
1 tablespoon of soy sauce

Stir until ingredients are completely mixed

Ginger Beef

Used for: Beef, or Pork
Serves: 24
Marinade time: 2 hours
Ingredients:
1/2 cup of Iron Works seasoning salt
1/2 cup of Iron Works All Purpose Sauce
7 cloves of crushed garlic
1/2 cup of fresh chopped ginger
1/4 cup of soy sauce
1/4 cup white wine
1/4 cup olive or peanut oil
1/4 cup lemon juice

Stir until ingredients are completely mixed

Dijon Honey Mustard

Used for: Beef, Chicken, or Pork
Serves: 24
Marinade time: 1 hours
Ingredients:
1/2 cup of Iron Works All Purpose Sauce
1/4 cup lemon juice
1/4 cup Dijon mustard
1/4 cup honey
2 tablespoons chopped parsley
6 cloves of crushed garlic

Stir until ingredients are completely mixed

RECIPE IDEAS FOR CHICKEN

Most chicken recipes require indirect cooking. With a few exceptions, chicken, even seared over an open flame can not stand the direct heat for the total cooking process. There must be a place on your grill that will allow the chicken to escape the direct fire. In these areas you can finish cooking your chicken completely, while also applying the finishing touches of your BBQ sauce. Remember, in most instances you apply the sauce in the final moments before serving. This will insure that none of your flavor is lost.

Dijon Mustard Chicken Breasts

Serves: 6 to 8
Style of Cooking: Direct
Marinate: Dijon Honey Mustard
Ingredients: 5 skinless, boneless chicken breasts (2 lbs.)

Cut chicken into 3/4 inch strips and season with Iron Works Seasoning Salts. Place in marinate for the allotted time. Remove from marinate and toss into bread crumbs. Thread onto skewers and place on the grill directly over flame. Grill for approx. 5 to 7 minutes or until the chicken is cooked through and the crumbs are brown.

Roasted Whole Chicken

Serves: 6 to 8
Style of Cooking: Indirect
Marinate: Not recommended
Ingredients: 1 whole chicken

Place whole chicken in aluminum roasting pan. Brush with mixture of olive oil and soy sauce at a ratio of 90% oil. Season with a mixture of Iron Works Seasonings, garlic and herbs. Cook approx. 3 1/2 hours or until done. You can add smoke works pellets for the ultimate flavor. Let stand for about 20 minutes while wrapped in tin foil before serving.

Indonesian Chicken

Serves: 4 to 6
Style of Cooking: Direct
Marinate: Peanut Sauce
Ingredients: 1 lb. thinly sliced chicken

Cut the chicken into thin strips, no more than 1/4 inch. Mix the seasonings of your choice in a large bowl, add the strips of meat and toss well until it is covered. Thread your chicken with skewers 3 to 4 pieces per skewer. Grill skewers until done, then cover with peanut sauce.

RECIPE IDEAS FOR BEEF

Most red meats are cooked directly over the fire and therefore are seared and cooked quickly. It is recommended that tougher cuts of meats are marinated and some will require longer periods. Remember to marinate in a covered container in the refrigerator for up to 24 hours or at room temp for 1 to 2 hours. Large portions and roasts of read meat are usually cooked slower on lower heat by indirect means. These meats are normally prepared with seasoning rubs or cooked with sauces.
Most red meats are cooked directly over the fire and therefore are seared We recommend an instant read thermometer for determining degree of doneness. The following is the degree of doneness relating to the internal temperature of your food.
  • Rare 120-125
  • Med Rare 130-135
  • Medium 140-145
  • Med Well 150-155
  • Well 160-170

Flank Steak

Serves: 6
Style of Cooking: Direct
Marinate: Your Choice
Ingredients: 2 1/2 lbs. trimmed flank steak

Remove steak from marinate, letting excess drip away before placing on the grill. Cook both sides for approx. 5 to 7 minutes, while brushing on your left over marinate. Remove from the grill, let stand for about 5 minutes and cut on a diagonal plane. Serve with Iron Works All Purpose Sauce for best results.

New York Strip W/Roquefort Butter

Serves: 6
Style of Cooking: Direct
Marinate: Not Recommended
Ingredients:
6 New York strip steaks
3 tablespoons of olive oil
1 tablespoon of Iron Works Seasoning
1 stick of low salt butter
1 cup of Roquefort cheese
1 tablespoon of chopped parsley
1 tablespoon of garlic, crushed
